Spinach Balls With Mustard Sauce

                                                                                
Quantities                 Ingredients
Spinach Balls:

2 10 oz. packages
Frozen chopped spinach, thawed and squeezed dry
2 c.
Herb stuffing mix, crushed
1 c.
Firmly packed freshly grated Parmesan cheese (5 oz. wedge)
1/2 c. (1 stick)
Butter, melted

Small green onions, finely chopped

Eggs
Dash
Freshly grated nutmeg
Mustard Sauce:

1/2 c.
Dry mustard
1/2 c.
White vinegar
1/4 c.
Sugar
1
Egg yolk

Preparation Procedures:

1. Combine all ingredients except sauce 
in large bowl and mix well.

2. Shape into 1 inch balls. Cover and refrigerate or freeze until ready to bake.

3. Preheat oven to 350 degrees. Set balls on ungreased baking sheet and bake until golden brown, about 10 to 15 minutes. Serve with Mustard Sauce.

4. Mustard Sauce: Combine mustard and vinegar in small bowl. Cover and let stand at room temperature, 4 hours. Mix sugar and egg yolk in small sauce pan. Add mustard-vinegar mixture and cook over low heat, stirring constantly, until slightly thickened. Cover and chill. Serve at room temperature.

Yield:  70 spinach balls

Oven Temperature:  350 degrees

Baking Time:  10 - 15 minutes
