Potato Curry

Ghee (or oil)

Potatoes, peeled and cubed
1 large
Onion, chopped
2 Tbsp.
Chopped cilantro
1 tsp.
Turmeric
1/2 tsp.
Chili powder, salt (if desired)
1 tsp.
Garam masala

Preparation Procedures:

1. Melt ghee (fat), add onions and fry until golden brown.

2. Add cilantro, turmeric, chili powder and salt.

3. Add potatoes and fry quickly (adding a little water to prevent sticking).
Remove from saucepan and put contents in pot with lid.

4. Place in oven at moderate heat (350 degrees) for 30 to 45 minutes, until potatoes are cooked. Add garam masala 5-10 minutes before finished cooking or upon reheating.
