Ox Tails

Oxtails, disjointed
1 can
Stewed tomatoes
3 c.
Beef broth
1/2 c.
Barley

Carrots, chopped
3
Bay leaves

Bell peppers

Preparation Procedures:

1. Soak oxtails in cold water for 1 hour.

2. Drain & dry.

3. Brown in frying pan.

4. Add all other ingredients.

5. Cook in 350 degree oven for 4 hours, remove juice, clear off fat.

6. Combine juice with oxtails (can add wine).

Pan Size & Preparation:  Frying pan in which oxtails fit; then covered heavy pan for baking.

Yield:  4 servings

Preparation Time:  1/2 hour for first part; 4 hours to cook; 1/2 hour final touches

Oven Temperature:  350 degrees

Baking Time:  4 hours

Test for Doneness:  Meat is soft to fork
