Max's Hot Potatoes - Reuben Style

                                                                  
Quantities               Ingredients
1 dozen
Medium-sized red potatoes

Sauerkraut

Corned beef, diced

Shredded swiss cheese

Thousand Island dressing

Chopped parsley

Preparation Procedures:

1. Cut the potatoes in half and trim bottoms so they can stand up. Steam just until tender.
Make a small depression in the top of each half with a melon baller or Parisian spoon. Deep fry in hot oil until crisp.

2. Mix together corned beef, sauerkraut, and cheese. Fill depressions in potatoes with mixture. Top each with a dab of dressing and sprinkle with more cheese. Add chopped parsley.

3. Heat in a 350 degree oven until cheese is bubbly. Serve immediately.

Note:
Quantities will vary with the number and size of potatoes.
