Italian Wedding Soup

3/4 lb.
Ground turkey
3/4 lb.
Italian sausage, casing removed
2/3 c.
Fresh white bread crumbs
1/4 c.
Freshly grated Pecorino Romano cheese
1/4 c.
Freshly grated Parmesan cheese, plus extra for serving
1 extra large
Egg, little beaten

Kosher salt

Preparation Procedures:

1. Preheat oven to 350 degrees. For the meatballs, place the ground turkey, sausage, bread crumbs, Pecorino, Parmesan, egg, salt (just a little) in a bowl and combine together with a fork or your hands. 

2. Take about a teaspoon and roll in to a meatball onto a sheet pan lined with parchment paper. You should have about 40 meatballs. They don’t have to be perfectly round. 

Pan Size & Preparation:  Sheet pan lined w/parchment paper 

Yield40 meatballs 

Preparation Time:  Bake for 30 minutes, until cooked through and lightly browned. Set aside. 

Oven Temperature:  350 degrees 

Baking Time:  30 minutes
