Curried Potatoes

Ghee (or canola oil)

Large potatoes, peeled and cubed

Large onion, chopped
2 Tbsp.
Chopped cilantro
1 tsp.
Turmeric
1/2 tsp.
Chili Powder
1/2 tsp.
Salt
1 tsp.
Garam Masala

Preparation Procedures:

1. Melt ghee (or heat oil in skillet), add onions and fry until golden brown. 

2. Add cilantro, turmeric, chili powder, and salt. 

3. Add potatoes and fry quickly (adding a little water to prevent sticking). 

4. Remove from skillet and put contents in pot with lid. Place in oven on moderate heat (350 degrees) for 30 - 45 minutes, until potatoes are cooked. 

5. Add garam masala 5 - 10 minutes before potatoes are done cooking.

Yield:  6 side servings
