Buffalo Balls

Cooking spray
1 Tbsp.
Basil oil
1
Egg
1/2 lb.
Ground buffalo meat
1 tsp.
Garlic, minced
1/4 c.
Onion, chopped
1 Tbsp.
Seasoned bread crumbs
1 Tbsp.
Ketchup
1 Tbsp.
Fresh basil, chopped
1/2 Tbsp.
Light soy sauce
1/4 c.
Mozzarella, shredded
1/8 tsp.
Ground pepper

Preparation Procedures:

1. Spray large frying pan.

2. Saute: chopped onions, garlic, and fresh basil (save heated frying pan as-is.)

3. Using large mixing bowl, mix egg, buffalo meat, bread crumbs, ketchup, and soy sauce. Add slightly cooled onions, garlic & basil. Add mozzarella & mix completely. 

4. Heat 1/2 basil oil in same pan. 

5. Round meat mixture into golf-ball sized balls. 

6. Fry and drain on paper towels. Add remaining basil oil as new meatballs are cooked. 

7. To keep meatballs in round shape, use two regular
tablespoons to turn as they brown. 

Yield:  12 meatballs
