Anzac Biscuits

                                                                                            
Quantities                  Ingredients
2 Tbsp.
Boiling water
4 oz.
Butter
2 Tbsp.
Golden syrup, or corn syrup
1 tsp.
Baking soda
1 c.
Flour
2 tsp.
Baking powder
1 c.Sugar
1 c.Coconut
1 c.Rolled oats
1 tsp.Vanilla

Preparation Procedures:

1. Melt together the butter, golden syrup and water.

2. Put all dry ingredients in a bowl.

3. Pour over the melted mixture and add the vanilla. Mix well.

4. Put on cold tray in teaspoonfuls and press down lightly with a fork.

5. Bake for 10 minutes at 350 degrees.

6. Remove from oven but leave on tray for approximately 5 minutes before removing to a wire rack to finish cooling.

7. Store in an airtight container.

Oven Temperature:  350 degrees

Baking Time:  10 minutes

Note:  During World War I, the wives, mothers and girlfriends of the Australian soldiers were concerned about food being supplied to their men, so they made these biscuits which are still popular today. They are especially served on ANZAC Day, which is commemorated on April 25 to honor members of the Australian and New Zealand Army Corps (ANZAC) who fought at Gallipoli in Turkey during World War I.
