Almond Roca

                                                                                         
Quantities             Ingredients
1 c.
Almonds, chopped
1 c.
Walnuts, ground
1 c.
Sugar
1/2 lb.
Butter
20 oz.
Milk or dark chocolate

Preparation Procedures: 

1. Melt butter in saucepan over low heat. Stir in sugar. 

2. Stirring constantly over medium heat, bring sugar/butter mixture to a rolling boil and cook 5 minutes. Stir in almonds. 

3. Stirring constantly, bring mixture back to rolling boil for another 5 minutes. Lower the heat but keep syrup bubbling and continue stirring until syrup turns golden brown.  Don't overcook. 

4. Working quickly, pour syrup onto a warm, ungreased cookie sheet and spread across pan in a thin layer. Syrup will harden quickly. Allow it to cool completely. 

5. Melt half the chocolate in a double boiler. Spread the melted chocolate over the sheet of roca. 

6. Quickly sprinkle ground walnuts all over the chocolate and gently press into the surface. 

7. Refrigerate until thoroughly chilled. 

8. Gently loosen layer of roca in pan and flip so chocolate side is down.  Repeat steps 5-7.  Break sheet of chilled roca into small pieces by hand.
